Potato Chip Cookies

I was first introduced to potato chip cookies in college. My old-friend-turned-new-boyfriend-someday-husband had a received a care package from his grandma. Filled with, of course, baked goods, as all care packages from grandmas contain.

This particular package included a strange new cookie, something that simultaneously grossed me out and intrigued me. At the time I was a serious cookie baker, but not that adventurous. I had perfected my chocolate chip cookie recipe, but hadn’t ventured much further. College budget and all prevented me from experimenting much.

After much resisting and endless teasing, I caved and tried one of the cookies.

Then I had another.

I may have been too stubborn to admit how delicious they were, but they were to die for. The whole sweet and salty thing, you know?

Last weekend we received the heartbreaking news that Hubs’ grandma passed away. The very same grandma who introduced me to potato chip cookies, strawberry bread, and delicious chocolate chip cookies. She made chocolate covered pretzels that were better than any other I’ve ever tasted. And she always, always, made a special banana bread just for me, without nuts. Somehow, with all of the baking that she did, she always remembered.

Over the holidays we had the chance to spend some time with her, open gifts, and introduce to her the little man. And we captured this one amazing photo. Four generations of my husband’s family. It doesn’t get more amazing than that.

Sunday night, after we heard the news, I baked. I made those potato chip cookies that I first ate over 10 years ago. I don’t have Grandma’s recipe, I wish that I did. I’m hoping that I can track down her recipe box and dive right in.

My version, though not exactly the same, (but really, they wouldn’t be the same even if I had her recipe) got the thumbs up from Hubs. These cookies will now have a regular place in our home, bringing with them memories of a wonderful woman, a passionate baker, and a loving mother, grandmother and great-grandmother.

Potato Chip Cookies

Prep Time: 10 minutes

Cook Time: 9 minutes

Potato Chip Cookies

Sweet, salty, crispy potato chip cookies.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 2 cups crushed potato chips
  • 1 cup peanut butter chips, butterscotch chips or chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl stir together flour and baking soda. Set aside.
  3. Using an electric mixer, cream together butter and sugars until light and fluffy.
  4. Add the eggs and vanilla extract. Mix to combine.
  5. Slowly add flour mixture, beating until well combined.
  6. Stir in the potato chips and peanut butter chips.
  7. Drop 2-inch cookies onto baking sheets lined with parchment paper or silicone liner.
  8. Bake for 7-9 minutes, or until the cookies are golden brown.
  9. Cool for 5 minutes on the baking sheets, then move to wire racks to finish cooling.
